I feel like that title is a mouthful but I couldn’t think of a better name for said bread.
As I alluded to yesterday in my review of Designer Whey Protein I did a little experimenting in the kitchen over the weekend.
I wanted to make a protein bread without sacrificing flavor and making it making it seems like it was in fact bread and not a protein packed snack, if that makes any sense.
This bread isn’t a moist (cringe, I can’t believe I actually typed that word out) one which was disappointing to me because that’s the way I like my sweet breads. I think I may have baked it a minute too long or gave it too much of something. If you feel like playing around with the recipe let me know if it works out for you.
French Vanilla Protein Banana Bread
Serves 10
Ingredients:
Vegetable oil cooking spray
2 cups whole wheat flour
2/3 cup sugar
1 teaspoon baking powder
1 teaspoon baking soda
1/2 teaspoon salt
2 scoops Designer Whey French Vanilla Protein Powder
1 cup 2% Banana Strawberry Chobani (next time I would use 1 1/2 to give it more moisture)
2 large eggs, lightly beaten
4 tablespoons unsalted butter, melted and slightly cooled
1 teaspoon vanilla extract
2 bananas mashed
Directions:
1.) Heat oven to 350°. Coat a 1-lb loaf pan with cooking spray. Combine flour, sugar, baking powder, baking soda and salt, protein powder in a bowl.
2.) Combine yogurt, eggs, butter, banana and vanilla in a second bowl. Fold yogurt mixture into dry mixture; stir to combine completely. Scrape batter evenly into loaf pan. Bake until top is golden and springs back when you gently touch it, 30-35 minutes (time may vary depending on oven).

This recipe looks delish! To make it more *moist* (ick, I cringe at that word too!) I would add in 2 more bananas and decrease the flour by 1/2 cup. I’ve found that the more bananas you use in bread, the better it turns out

I keep trying to find good recipes to bake with protein powder but half of the pictures even LOOK like the baked good are dry. Did you notice that?! This looks pretty good though, especially since it has bananas + greek yogurt. The 2 eggs miiiight have made it more dense? Maybe just one? I’m not sure. If protein wasn’t so expensive I would definitely play around with recipes more but I don’t want to waste anything! haha!

yeah I know exactly what you mean, I was apprehensive to post this recipe, but I like the bread and figured someone else may or even be able to make it better! I always go for the cheap protein powders, but it pains me to use them in a recipe and then have it fail, money down the drain!

Favorite baked good? Hmm I don’t know… cake, cookies, challah bread, muffins… all of them? I’m skeptical about protein powder though

i use protein powder to make no-bakes all the time. they’re awesome granola bars for the morning or for snacks! i try to make them a little healthier, so most of the sugar/ cocoa/ chocolate is replaced with chocolate protein powder. the butter can be mixed coconut oil and unsweetened applesauce. i also stir in flax and chia seeds for an extra protein kick. so nommers!

good luck! might need to keep adding (almond) milk/ oats to get the right texture (and when i make them for my bf– who could care less about calories– i just use butter anyway). mmm getting hungry now…
I make both protein bars & protein muffins with protein powder! I have used a lot of powders & of course I love DW & became an affiliate & can now offer people discounts on online orders with my special code!
Anyway, I found with DW powder, you do have to cook a bit less time then some other powders I have used. With any powder. I tend to stop short of the recipe time a little because of this.
My recipes – 2 different ones – use banana, applesauce – one uses unsweetened almond milk AND I always add in extra liquid egg whites to help with the moisture.

Haha, I’m exactly the same with the word ‘moist’ – I do this noticeable cringe everytime someone says it. People love to use it just for their own amusement at my reaction!
