You may or may not have heard all the hype about Meatless Monday’s. Well people are trying to start a national movement in which no one eats meat on Monday’s. As someone who used to be a full on vegetarian and now I just eat chicken, turkey and fish I though I would join the movement and have meat free Mondays! As a person who craves protein and needs to have it at every meal I thought today may be a challenge for me. It turned out to be quiet successful and I am excited for my next Meatless Monday.
For breakfast:
I took a pointer from PBFingers who not too long ago took her empty container of peanut butter and put it to good use. You know how when you finish the jar of peanut butter and there is still peanut butter remaining on the bottom and sides? Well rather then just rinsing it and throwing it in the recycle bin, she cooked oats and poured them into the jar to make peanut buttery oats. This morning I had an empty jar and had to give it a shot.
I cooked steel cut oats on the stove, once they were done I stirred in some coco powder and the poured my oats into the jar and then added a banana! It was AMAZING!!!! I wish I could have it again tomorrow!
As a mid morning snack I had some pistachios and an apple.
For lunchÂ
I had the left over veggies from last night, fage yogurt with cherry and pomegranate and an orange.
For dinner:
When I got home I wasn’t very hungry so I made a smoothie with left over fruit from yesterday, 5 ice cubes, 1/2 cup plain greek yogurt and a scoop of chocolate protein powder.
Ok so that last statement was a lie…I was hungry after work but what I really wanted for dinner wasn’t appropriate to be called a meal, so I had some fruit and then had what I really wanted…..
A huge piece of chocolate angel food cake with Better n Peanut Butter smeared on it!!
Do you ever just want to skip dinner and only eat dessert?

>I probably shouldn't admit this, but as a peanut butter freak myself, I can assure you there's never any left in my jar. Whatever I can't reach with my finger, I get with a spatula…peanut butter is a terrible thing to waste! The oats in a jar is a great idea though, so maybe with my current jar I'll try and show some restraint!
