Happy Friday!!
For 3 nights in a row I have eaten Watermelon! I could live off watermelon and coffee alone and be a very happy person!
But since we know I like to keep things balanced over here and reading a blog about a person who only eats watermelon and drinks coffee would be pretty boring so I made a salad. You’re welcome for thinking of you.
I am a self proclaimed mayonnaise HATER! I hate it, it smells, the thought of what it is made of grosses me out. It is used in the dressing for this recipe. Now be for you go and call me a convert, a traitor or a hypocrite. let me just say that I still HATE mayonnaise.. But I liked this dressing..oxymoron!?
Or the simple fact that you use so many herbs and spices that you forgot your most hated condiment is involved?
Whatever it is you should really make this salad, the bread really makes it (I used a whole wheat ciabatta) and I added artichokes to the mix and put it over romaine lettuce. It was a winner.
