After my sub par muffins on Thursday I was I needed of redemption. I awoke this morning in the mood to bake and knew that we had some almost too old bananas and remembered that Betheny Frankel had an Banana Oatmeal Chocolate Cookie recipe I had always wanted to try. I changed mine up a bit and they were soo delicious! I definitely redeemed myself! 5 Carrots!
Banana Oatmeal Cranberry Cookies
made about 14 cookies
1 1/2 cup flour
3/4 cup rolled oats
1/2 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
1/2 cup raw sugar
1/3 cup dried cranberries
1 tsp canola oil
1/3 cup fat free milk
1/2 cup banana puree (2 small bananas)
1 tsp vanilla extract
Preheat oven to 375 degrees. Combine all dry ingredients in a bowl and all wet ingredients in another bowl. Mix the dry and wet ingredients until well combined, I ended up adding about another 1/3 cup milk because it was too dry when i mixed it together.
Use a medium size ice cream scoop or large spoon and scoop onto cookie sheet covered with wax paper. Bake for 12-15 minutes.
Look who decided the magazine basket was his new place to nap and catch some rays!
