I decided to start a weekly series called budget friendly meals for 2. Seeing that a lot of people I know (including us) are on a tight budget whether they are saving for a house, family, vacation, paying off loans or what have you it seems that we are all trying to save for something and let’s be honest, a good meal at home doesn’t need to break the bank! Most recipes will be original but if not the source will be linked. I will always do a cost break down at the end.
1 container of burrata or mozzarella
2 beef patties
Salt and Pepper
1.) Pre heat oven to 350. Thinly slice eggplant into rounds, toss in olive oil and salt and pepper and bake about 20 minutes or until they are cooked through.
2.) Slice tomatoes and cheese of choice.
3.) Pre heat grill pant on mediume, once its hot place burger on pan. Cook each side about 2 minutes or until desired color. If using something like a George Forman close lid and cook about 5 minutes.
4.) Top your cooked burger with an eggplant, tomato and cheese. Drizzle with olive oil, balasamic glaze, salt and pepper.
*you will have lots of eggplant left over so I just made eggplant, tomato and mozz salad to have on the side and eat on another day.
