I decided to start a weekly series called budget friendly meals for 2. Seeing that a lot of people I know (including us) are on a tight budget whether they are saving for a house, family, vacation, paying off loans or what have you it seems that we are all trying to save for something and let’s be honest, a good meal at home doesn’t need to break the bank! Most recipes will be original but if not the source will be linked. I will always do a cost break down at the end.
1 jar sauce of choice
1 lb organic ground beef (or meat of choice)
With a spiralizer (you could also use a veggetti or this veggie stip)strip or spiralize your zucchinis.
2.) Heat a skillet on medium (if you aren’t using beef grease your pan). Cook meat until its browned and cooked through, season with salt and pepper.
3.) In a separate pan place zoodles in it until the are warm add your sauce of choice and stir it around. (you can also do this in the microwave but I like to avoid it whenever possible)
4.) Transfer to two bowls and top with your meat. Reserve any extra meat for lunch the next day!
2 Zucchinis – $1.50 each at farmers market- $3
1 lb organic ground beef (or meat of choice) from Trader Joe’s- $7.99 (or go meatless and make this meal under $10)
1 Jar sauce of choice I used Trader “Giotto’s” organic vodka sauce- $2.99
Total = 13.98
