Marvelous Monday

I hope everyone had a great weekend and a great Christmas for those of you who celebrated!

I certainly had a great Christmas and long weekend!

Marvelous is: a nice Christmas eve at a family friends house. Every year we go to our family friends house to hang out and help them decorate their tree. Santa decorates their tree so they don’t do it until later (fortunately everyone is grown up now so we can do it early in the evening).

Marvelous is: Christmas morning at my parents house, we stayed at my parents so we could wake up and open presents with them. After presents we all had breakfast and went on a hike before getting ready for our guests.

Marvelous is: all the food we had for Christmas dinner! I am sorry I didn’t take any pictures but the short ribs my mom made stole the show!

Marvelous is: a much needed girls night. All of my friends from high school live in different places and its hard to get us all together but we were finally able to figure it out and it was so nice to have everyone together again!

Marvelous is: My delicious cauliflower pizza I made last night! It has mozzarella cheese, brussels sprouts and an egg on it!

The recipe for the crust is super easy:
2 1/2 cups shredded cauliflower
1/2 cup finely chopped parmesan
1 tsp salt and pepper
1 egg

Heat the oven to 450, combine all the ingredients and press on to a pizza stone. Bake the crust for 15-20 minutes or until golden brown. Put your toppings on and bake for another 10-15 minutes.
