Breakfast for dinner was never really a thing in my household growing up.
I guess we weren’t big breakfast people!? Or as you saw last week I wasn’t really a big pancake person.
I have really grown to enjoy eggs, and egg dishes such as omelets, quiches and frittata’s. Ever since I made a frittata for me and Jeff for dinner it has become something we have often. Frittata’s are quick and easy meal to make so it works out perfectly for my sometimes busy schedule.
Prep time: 10 mins
cook time: 30 mins
Serves: 4, or 2 hungry people.
1 zucchini, cut into slices
1 red bell pepper, chopped
1/2 onion, chopped
4 piece of turkey bacon (or bacon of choice)
3 eggs (or 7 eggs, omit egg whites)
4 egg whites
splash of milk (I used unsweetened almond milk)
1/2 cup shredded cheese of choice
salt and pepper to taste.
1.) Preheat oven to 350 degrees. Pray a 9×9 baking pan with non stick cooking spray.
2.) Cook turkey bacon however you please. I cook on George Foreman. Chop into bite size pieces one cooked.
3.) Heat skillet on medium heat and spray with no stick spray. Saute’ red peppers, onions and zucchini.
4.) Crack your eggs into a bowl, add veggies, milk, cheese, salt and pepper and mix well.
5.) Pour mixture into pan and cook for 30 minutes.
Enjoy for breakfast, lunch or dinner whatever you prefer!
