It is no secret that I have a huge love for kale.
I love it in anyway shape, or form. Kale chips might be one of my favorite ways to eat kale, besides just throwing it in a salad and topping it with everything humanly possible!

What better way to enjoy kale then mixing it with a delicious grain like quinoa. Long time readers know about my unhealthy obsession with quinoa, so we don’t need to get into that again.
But, you could grab a fork and come join me for lunch!
Quinoa and Kale Salad with Lemon Dressing:
1 cup uncooked quinoa
2 cups vegetable broth (or another broth or water)
20 grape tomatoes, halved
1/2 a red onion, chopped
1 1/2 cups kale
1.) In a sauce pan bring 2 cups of broth (or water) and quinoa to a boil. Put a top on your pan and reduce heat to simmer. Allow to cook until broth is dissolved. Fluff with a fork.
2.) In the meantime heat a skillet on medium heat and spray with cooking spray. Saute your onions, tomatoes and kale.
3.) Combine, quinoa and veggies.
1 lemon, juiced. (you want approximately 3-4 tbs of juice)
1 to 2 tbs good olive oil (I used Aria)
salt and pepper to taste.
1.) Combine the juice of your lemon with the olive oil and salt and pepper.
2.) Mix together and pour over salad.
