Creamy Pesto, Turkey and Rice

Hey there! Happy Wednesday! Anyone else struggle to roll out of bed this morning!? I know I was dragging booty at the gym this morning!

Yesterday was a very relaxing day. Jeff and I took advantage of having a work day off together and went to the movies. We saw Silver Linings Playbook and I LOVED it!!! I want to see it again! I highly recommend it!

I thoroughly enjoyed having the time off, I got in some quality family time, cooking/baking which is just what I needed! Lucky for you that means I have a lot of recipes to share!

Without further ado, I will share a recipe with you!
So delicious! So easy!

Creamy Pesto, Turkey and Rice


1 cup brown rice
2 cups water
2 cups plain greek yogurt (I used Chobani)
1/3 heaping cup of pesto (more if you please) (I used jar pesto from Trader Joe’s)
1 lb ground turkey
salt to taste

1.) Cook rice according to package directions
2.) Heat oven pan at medium heat, drizzle with olive oil cook turkey and season with salt.
3.) Heat chobani in a sauce pan and add the pesto. Stir together until yogurt and pesto are combined and you have a nice creamy sauce.
4.) In a bowl add rice, turkey and sauce. Mix together and enjoy!

Seriously so easy and so good!
