Easy Crock- Pot Chili

I am a summer girl through and through but I am trying to embrace the fall. After all there are several things I enjoy about the fall.

apple picking, pumpkin picking, pumpkin seeds, pumpkin spice coffee, brisk temperatures for my morning runs and cool evening walks, warm sweaters, boots and soup… boy do I enjoy soup.

Especially after a cool fall day, all I want to do is curl up with a nice steaming bowl of soup.

I bit the bullet the other day and bought a crock pot at Bed, Bath & Beyond for $25, I know living on the edge over here!

I was anxious to break in my new crock pot and christened it with some chili!

Crock Pot Chili:
Prep time: 10 mins
Cook time: low- 8 hours; high- 4 hours

Ingredients:
1 lb group turkey meat (use beef, chicken if you please)
4 long carrots peeled and chopped
1 onion chopped
1 can corn, drained
1 28 oz can of plum tomatoes *do not drain*
1 orange pepper chopped
1 can kidney beans, drained
1 tbs garlic powder
1 tbs chili powder, more if you would like (I used another seasoning because we didn’t have chili powder and our chili was very mild)
salt to taste

Directions:
1.) Place all ingredients into the crock pot, including the liquid in the tomatoes.
2.) Turn on low and cook for 8 hours. Set it and forget it :)
top with shredded cheese if desired!

summer!!!!

What do you like about fall?
I enjoy putting on sweaters or sweatshirts and walking in the brisk temps, but once it gets below 65 I will probably start complaining!
