Just about every Wednesday at work we have a meeting with all my other co-workers and one of the supervisors here brings in cookies and I usually pass them up because I like a homemade cookie over a store bought cookie and I read somewhere that if you want a treat you should tell yourself that if you still want it later you will make it when you get home and 9 times out of 10 this usually works.
Yesterday spring time double stuffed oreo cookies were brought in. I can’t even recall the last time I had an oreo, maybe in colleg? maybe in high school? Anyways I grabbed one, my co-worker (the only male we have) made a joke saying “You know Kaitlin oreos are the gateway cookie” He likes to pick on me because I usually pass on cake and cookies. We laughed and joked about it for a while.
And then I got home and wanted to bake something and I couldn’t help but laugh and think that oreo as the gateway cookie to my sweet tooth for the day!
Naturally I needed to satisfy my urge to bake and I did it the easiest way I knew how..
Almond Butter Rice Krispie Treats (inspired by the recipe on the Trader Joe’s box of rice
1 cup brown sugar
1 cup blue agave syrup
1 cup almond butter (or peanut butter)
7 cups rice krispie cereal
1.) Combine brown sugar and blue agave syrup in a sauce pan. Bring to almost a boil stirring until brown sugar dissolves. Remove from heat.
2.) Add almond butter to mixture and mix well. Add rice krispie cereal and mix well.
3.) Press mixture into a 13x9x2 inch greased pan. Refrigerate for a few hours to let them harden
*These things are soo good, be prepared to eat more than you really should 😉
