Strawberry Yogurt Bread

I really like to bake, I will take any excuse to bake and if I don’t have one I will make one.

I really like to make bread, not the bread you eat with a sandwich but bread that is sweet and tasty and sometimes has chocolate chips in it, or giant pieces of fruit in it. Bread that taste even better when you warm it up and put peanut butter on it or some sort of jam. YUM. I made a box bread a while ago and remembered why I never make boxed things, they never taste as good as the homemade does.

To make up for the boxed bread I need to make my own bread and lucky for me we had some strawberries that wanted to be put into bread (whatever that means).

Strawberry Yogurt Bread adapted from this recipe
Serves 10


Vegetable oil cooking spray
1 1/2 cups whole wheat flower (white flour is fine)
1/2 cup of oats
2/3 cup sugar
1 teaspoon baking powder
1 teaspoon baking soda
1/2 teaspoon salt
1 cup nonfat plain greek yogurt
2 large eggs, lightly beaten
4 tablespoons unsalted butter, melted and slightly cooled
1 teaspoon vanilla extract
1 cup of strawberries, chopped finely (you are welcome to add more)

1.) Heat oven to 350°. Coat a 1-lb loaf pan with cooking spray.
2.) Combine flour, 2/3 cup sugar, baking powder, baking soda and salt in a bowl. Combine yogurt, eggs, butter and vanilla in a second bowl. Fold yogurt mixture into dry mixture; stir to combine completely. Gently fold in strawberries. Scrape batter evenly into loaf pan. Bake until top is golden and springs back when you gently touch it, approx 60 minutes. *Check on your bread every so often*

Too bad its gone, I could go for a piece right now…
