What I ate Wednesday

aka what I ate on Valentine’s day while the boyfriend ate steak..

First things first, the movie theater was hoping with couples and “galentines” (my boyfriend calls a group of girls at the movies on valentines day, pretty creative huh?). On Tuesday’s our movie theater does cheap Tuesday’s so I am sure that is another reason why it was the happening place last night.

The Vow was amazing, I know it got some bad reviews but I LOVED it, the whole entire time I kept thinking this is a true story! The boyfriend didn’t even think it was that bad, which says a lot.

Breakfast: Surprise, surprise no oatmeal! I made myself an egg white and laughing cow cheese sandwich. This is one of my favorite things to have for breakfast and it has been a while. Side of strawberries and coffee of course!

Lunch: Unfortunately it went un-photographed but I had a huge salad with lettuce, snap peas, carrots, tomatoes, avocado. Apple on the side and earlier in the day I had some plain greek yogurt with agave, mixed berries and some granola

Dinner: Skinny mashed potatoes (recipe can be found on Swanson’s broth boxes), sauteed zucchini and peppers, salmon for me and I some how score it for $1.42 is that real life?

Same as above and steak for the man. To marinate the steak I used 1/2 cup soy sauce, 1 garlic clove chopped and 1/4 ground ginger (I marinated over night). To prepare it I pre heated the oven to 325 and cooked it for 20-25 mins and came out medium-well.

Verdict:I successfully cooked meat!! He loved and really liked the marinade! Win for me :)
