Cranberry Pumpkin Bread

it’s meatless and I baked you some bread

In case you haven’t noticed I really like to bake, I bake anything but one thing in particular I really like to bake are breads, not legit bread, I’m talking sweet breads such as raspberry lemon bread, banana bread or this cranberry pumpkin bread. I like to bake bread because you can cut small pieces off and keep cutting small pieces off before you realize you have eaten half the bread. But it is ok because you ate it in small pieces. Don’t act like you don’t know what I am talking about, believe me your secret is safe with me ;).

Cranberry Pumpkin Bread:

Prep time: 10 minutes
Cook time: 1 hour
Yield: 24 (makes 2 loafs)

3 cups all-purpose flour
5 teaspoons pumpkin pie spice
2 teaspoons baking soda
1 1/2 teaspoons salt
1 1/2 cups granulated sugar
1 (15 ounce) can 100% Pure Pumpkin
4 eggs
1 cup vegetable oil
1/2 cup orange juice
1 cup fresh or frozen cranberries

1.) Preheat oven to 350 degrees F. Grease and flour two 9 x 5-inch loaf pans.
2.) Combine flour, pumpkin pie spice, baking soda and salt in large bowl. Combine sugar, pumpkin, eggs, vegetable oil and orange juice in large mixer bowl; beat until just blended. Add pumpkin mixture to flour mixture; stir just until moistened. Fold in cranberries. Spoon batter into prepared loaf pans.

3.) Bake for 60 to 65 minutes or until wooden pick inserted in center comes out clean. Cool in pans for 10 mins remove from pans to cool completely. Enjoy!
