Cranberry Apple Crisp

UGH another fun weekend has come and gone! In case you are catching up you can see how my friend enjoyed her first trip to the United States here and here!

I hope this week goes by fast, pretty soon I can start my count down to Costa Rica :)

I owe you a recipe for the best side dish ever! You need to make this at your next party. I know I say “you need to make this a lot” and I mean it when I say it. But honestly YOU NEED TO MAKE THIS! Your family and friends will thank you a million times over and when you make this you should serve it with your main course, not dessert. It is totally acceptable to make this and call it a meal… I mean it has fruit and oats in it. It is also acceptable to have several servings of this, I am telling you one serving just wont be enough.

Cranberry Apple Crisp
Prep time: 20 mins (unless you have a nifty apple peeler, that is your savior)
Bake time: 45 mins
Yield: 6-8 servings (unless you eat it with me, in which case I will take half, you and whoever else can have what is left; I’m kidding, sort of πŸ˜‰ )

Ingredients
3 cups peeled, chopped apples
2 cups fresh cranberries
2 tbs all purpose flour
1/2 cup sugar
Topping
3 packages instant oatmeal (cinnamon and spice, maple and brown sugar or apples and cinnamon are all fine options)
3/4 cup chopped pecans (can be omitted)
1/2 cup all purpose flour
1/2 cup brown sugar
1/2 cup butter, melted

1.) Preheat oven to 350 degrees
2.) Combine apples, cranberries, 2 tbs flour and sugar. Mix well and place in a 2 quart casserole dish.

3.) Combine Oatmeal, chopped pecans, 1/2 cup flour, and brown sugar; add butter and stir well. Spoon over fruit mixture.
4.) Bake uncovered for 45 mins.
5.) Garnish with pecans and cranberries if desired
