Thai noodles with tofu and broccoli

It has been a while since I have posted a recipe for Meatless Monday, or since I have talked about Meatless Monday I have still been sticking strong even though I haven’t posted about it. I made a commitment and I am sticking to it.

I am a hug fan of Asian Cuisine and jumped at the chance to cook some of my own.

This meal is quick and easy and delicious!

Thai Noodles with Tofu and Broccoli

Prep time: 15 mins
Cook time: 10 mins
Serves: 4

8 oz. Udon Noodles (prepared according to the directions)
2 egg
1-2 heads broccoli, chopped into florets
3 cloves garlic, minced
1 onion, minced
1 container of tofu, cut into pieces
2 Tbsp. oil
2 Tbsp. soy sauce
Stir-fry sauce:
3 Tbsp. regular soy sauce
3 Tbsp. fish sauce
2 tsp. brown sugar
1/2 tsp. white pepper
1/2 tsp. cayenne pepper

1.) Cut tofu in pieces and marinate in soy sauce
2.) Cook your Udon Noodles according to the package directions.
3.) Make stir fry marinade in a bowl and set it next to the stove.
4.) In a wok heat 2 tbs of oil, add your garlic and onions and sautee for about 1 minutes.
5.) Add your broccoli and cook for about 5 minutes, you may have to add more oil. After about 5 minutes push ingredients to one side and crack eggs one at a time on the open space. Quickly stir fry to cook the egg and mix it together.
6.) Add tofu, noodle and sauce and stir fry for about 3-5 more minutes.
7.) Serve and enjoy
