Peanut Butter Granola

I love granola and usually steer clear of it because I could just sit down and eat it straight out of the bag, another blogger I follow had made granola a few weeks ago and I have been wanting to try it since. Yesterday I made a peanut butter granola and then was feeling adventurous and made a honey, cherry granola with sliced almonds. My parents are taking a road trip tomorrow so I figured I would give them some healthy tasty fuel for the road.

Peanut Butter Granola:
2 tbs better n peanut butter (or any peanut butter)
1 tbs agave honey
1/4 tsp cinnamon
1/4 tsp vanilla extra
1 cup oats

Preheat oven to 325
Spray cookie sheet with non stick cooking spray
Combine peanut butter and honey in a microwave safe bowl, microwave for 20 seconds stir
Stir in cinnamon, vanilla and the oats
Bake for about 7-10 minutes

Honey, almond, cherry granola:
4 tbs honey
1/4 tsp cinnamon
1/4 tsp vanilla
1 cup oats
1/4 cup dried cherries
1/4 cup slivered almonds
(these are approximations I just poured)

Preheat oven to 325
Spray cookie sheet with non stick cooking spray
combine honey, cinnamon and vanilla, then add the oats, dried cherries and almonds
Bake for 7-10 minutes

For breakfast this morning I opted for the peanut butter granola!
1 cup greek yogurt
drizzle of honey
1 peach chopped
1/4 cup granola
munched on some more granola on the side
I am off to run a million errands, I plan to run 8 miles this afternoon…let you know how that one goes
